Kochechi arrowroot powder is prepared from 100% organically grown white arrowroot cultivated in Kerala. Extracting the powder from the arrowroot is a laborious task. First, the root is cleaned by peeling off the outer skin. Next, it is washed well and cut into small pieces. Then it is crushed in grinding stone. The crushed root is then mixed with water, not directly though, but through a sieve. We use a cotton cloth as the sieve to let the powder enter the water and settle down at the bottom. The mix has to be continuously stirred so that the powder does not get settled in the sieve and block the pores. When all the powder is sieved, we can take out the remaining waste and throw it away. As the next step, the solution is allowed to settle for about 5-6 hours. Pour out the water, and you can see the pure white arrowroot powder settled at the bottom. The last lap of the work: sundry the powder for 2-3 days, under light shade. Now, the pure arrowroot powder is ready! Arrowroot is a natural cooling agent and a low-calorie food, easily digestible too; so it is used as a health supplement and also for treating a wide variety of illnesses.
